Healthy (and oh so yum) meatballs

Mix all ingredients in a big bowl:

2 pound lean ground beef (or turkey meat)

1 large sweet onion, sliced into thin rounds

3 grated carrots,

4 stalks of finely chopped celery

3 garlic cloves, minced or pressed



2 tablespoons olive oil


2 teaspoon dried oregano, thyme, basil



1/2 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

2 (28 ounce) cans crushed organic tomatoes

Directions:

In a large bowl, combine turkey, carrots, celery, onion, garlic, olive oil, herbs, salt and pepper. Mix thoroughly, so the ingredients are combined. Roll into balls and place on a large skillet, add 1 can of crushed tomatoes, garlic, herbs, salt.

Place in the oven at 375 degree uncovered for 45-60 minutes.

Serve with brown rice or whole grain pasta, sprinkle some smiles and serve it with love:)
